Ingredients for
Mrs. Grissom's Tuna Bites

• 3 egg whites stiffly beaten
• 1 cup self-rising flour
• 1/2 tbl spoon cayenne pepper (optional)
• 1-1/2 tsp salt or to taste
• 1-1/2 tbl spoon chives
• 1/2 tsp paprika
• 3/4 cup corn meal for rolling (optional)
• Cooking oil for frying
• 11 oz cup of Mrs. Grissom's Tuna Salad
Preparation:
Beat egg whites until very stiff. Slowly fold Mrs G’s Tuna salad into egg whites. Do not over mix it so the air stays in the egg mixture. Then add flour, hot sauce (optional), salt, chives and paprika mix very slowly.
Shape mixture into small balls and roll in corn meal. Put oil in a heavy skillet to a depth of about ¼ to ½ -inch and heat over high heat. Place tuna balls in hot oil and cook until golden brown, turning constantly.
Garnish with lettuce on the outside of the plate and place the balls in the middle.
ALTERNATE ENDING: If you prefer, you can skip the part where you roll the tuna bites in the corn meal and simply drop them in hot oil and fry until brown and crispy outide. They are fabulous this way too!
